Doc I compare this to basically going to a auto parts store and asking for anything AMC. Some of old school guys might take time to look up item in big parts book, while others who might be new school just puch in your make and model and part into computer where it usually says NA. But if you have old part with you, like solenoid, old school guy usually looks at it and says 'hmmm, that is a Ford/Delco part, I think I have a match back here' and matches it up by sight. The other fellow says 'sorry, might try the other auto parts store down road' or my favorite 'sorry, that is a dealer item only!'.
 
Paint and body is another. I have a rustfree 73 AMX shell I was going thru. A place around corner I stopped to talk to because I have seen their work, the guy told me 'my paint work starts at $8000' basically to send me away as he didn't want do mess with it. I talked to owner of a Camaro who had a stunning paint job down there (and caught my attention as to why I stopped there in first place) and he told me his paint/body was $4000.
 
So you have a variety of factors.....some when there is places that can do the work, they don't want to, competent or not. Other times you have people in areas that might be remote, or don't know anyone AMC in their 'region' so fell all alone and just want to hear what other AMC fans said, good or bad before making decision. If someone here in Houston, which covers almost 10,000 sq miles (according to CofC) asked me 'who does good chroming work....well there are abuot ten places. I would highly recommend DC Bumper, but stay away from Quality, Houston, Superior and that place off Airline, as while they are 'competent' you get what pay for and it looks great for a few years, then flakes off chrome. DC's don't even after 20 years so I recommend them.
 
The guy who asks the question about the head is in Memphis I believe, not hotbed of AMC activity, but can I think go to Dollywood and also they have some good BBQ in that area.

Why is there such a mystique when it comes to AMC engine work? Any competent machine shop and the key word is COMPETENT can can port match the head and intake ports and give the ports a little polishing. Any 12'th grade auto shop student should be able to do a valve job too. Unless we are raising a generation of parts changers. Who remembers when the machinist came to your shop with portable tools to grind and lap the valves in the flathead engine still in the car? God I am old!!!!
