I would not use metal. You've already said why, condensation. Plus it can be expensive depending on what you buy. 

In a truss roofed garage. I'd use 5/8" drywall and mud it, paint it white with kitchen/bath paint as it contains mildewcide. 

My reason?
Single layer of 5/8" drywall is considered 1 hour burn through, IIRC. Meaning you may get to keep your garage should anything go wrong. 

I helped renovate a church Basement into a school. We had to encased the stair wells with TWO layers of 5/8" and the seams could not overlap. This was considered a 2 hour burn through. 

Plan for the worst, Hope for the best!

I lost a 30 x 50 garage full of vehicles...

I know some of you have built garages to house and work on your AMC projects and I need your advice. My garage is built (24 x 24) and I am in the process of insulating it now. I have the ceiling near done with R-25 Craft-faced fiberglass. I plan to cover this with some sort of metal material similar to siding used on pole barns, etc. My question is.........should I cover the insulation with a plastic vapor barrier or is the paper good enough to avoid condensation on the metal from the heat source. FYI, I live in central Illinois.
 
If you have done something similar, I'd like to hear your comments, either pro or con, and how satisfied you are with the warmth of your own garage. Thanks in advance.
