I had a mouse urine/crap smell in an old Ford that spent 35 years in a 
barn. Not until I stripped out every bit of upholstery, insulation, 
cardboard, etc out did the smell go away. All items going back in the 
car were stripped, cleaned, & paintedbefore going back in. All is well 
with it now.

You have to trace the odor down to the smallest piece of insulation or 
organic
debri.
Otherwise it will come back!
A lot of times it is leaves rotting in the cowl or heater box areas. 
Newer cars
with plastic trim have insulation glued to the backs of the panels to 
kill
sound. Mice love to build nests and die from old age in there.

   Mice also love to go up above the headliner and nest. That's a fun 
one too!

   Theoretically if you remove all the insulation and soft parts. Bleach 
scrub
all the hard surfaces, you "should" be good, but then maybe not!
