Some will say use them both, some will say don't.
I don't, but that being said since it allready had one in place you may want to use one.
I'd clean the surface and straight edge it. If it is true and straight I would not use the gasket.
  If it is not straight I would take to a machine shop and have it surfaced. Then I would not use the gasket.
To my thinking the engine was made and  delivered without the gasket, if the metal to metal seal is mooth and flush the gasket is not needed and won't be there to burn out.
   I have actually succesfully installed cast exhaust manifolds on engines that came with gaskets usin g this method!
However, If you have the gasket and surfaces are questionable then use it.
   Be sure to toque it properly, run it till hot, then retorque. Drive it a few cycles of heat cool, checking the torque as often as you can without going insane until you are sure it is staying torqued.
   You should get many miles out of it if you take the time to do it right, with or without the gasket!
