My counter to him would be, "If I wasn't interested in cosmetics I'd put newer style brakes on it"...
Really thats generaly the only reason people stay with the four piston calipers.
I agree with you, for that kind of money I'd expect them to be done right and look right.
  I'd tell him," Fine, I'll pay the d@#*ed shipping both ways, I'll also not be doing anymore business here and I got a big mouth too".
  If it's truly cosmetic and most people don't care, then he won't have any trouble sending it out to someone who doesn't care now will he?
