Just remember to use a 258 V-belt water pump -- the serpentine belt pump runs the opposite way ("backwards"), even if on the Wrangler or 258. 

I'd get a lock-up 998 or 904 to run. The AW4 would be nice but you need to wire a controller in. That's really not hard, but you need a throttle position sensor on the carbs. Or if you're running bucket seats and a console do what I did -- make a manual controller. I put it in drive then "shift" gears with a rotary switch. This was supposed to be a temporary mod, but I like it so will dress up my switch box instead (make a better looking one!). 

Sounds like you have a great plan, except for the points. If you don't want to use the EFI I kind of understand, especially since you're using multi carbs, but why not electronic ignition? A GM in-line six HEI can still be found in salvage yards, or if you want a stock look get a Pertronix. Cheap enough that it's sort of a waste to build a "modern" drivetrain and not take advantage of the better ignition! If you're concerned about being stranded somewhere use the Pertronix and keep a set of points in the glovebox, just in case.
