The baffle PROBABLY stops "high pressure" (sic) gasoline coming from the inlet from splashing and affecting float level -- and a rock steady and correct float level is critical to carb operation. It would probably run "OK" without it, but have the mixture vary minute to minute, likely manifest as crappy mileage or somethign subtle. Idle screw spring, yeah you can use any old thing, as long as it allows the idle screw to bottom out without binding and is stiff enough to stop the screw from moving with vibration. THe needle inlet retainer, hmm, can't picture that part, there's so many variations... some have a little clippy thing that keeps the needle aligned to the seat, some dont... junkyard part, that.
