That's a bit harsh on the attitude there, but I understand your feelings completely. Some people will do it anyway. I always suggest that they consider an AMC engine simply because the car will be easier to sell in most cases, and AMCs can make just as much power for about the same cost as a Chevy. I do that before giving advice on how to swap the engine without messing up the car. I still think it's better to preserve the car with a non-AMC drivetrain than see it crushed. If nothing else, it will be there for parts when they get tired of it. I DO PREFER to see AMC power in an AMC, with the original powerplant or one that was optional first, later model second. "Alternate" power is the LAST choice for me. You do bring out a sore point with me though. Any car that's in great condition seems to have been "restored". You can't have a RESTORED AMC with a Chevy engine unless it's a late 80s Spirit or early XJ Cherokee. It's modified, hot rodded, customized, or just "fixed up". I don't know how many ads I've seen that say something like "Restored 1974 Javelin -- original 304 auto car, now 401 w/WC T-5, Boyd wheels, Kustom Kolors Purple Haze paint", etc. That IS NOT a RESTORED car!! It's mostly AMC, but not RESTORED!!
