I'm running a 10.9" late 70's Jeep with B&B style in my American using a 82 Spirit bell and T-5. It definitely is a little on the stiff peddle side of things. The 4.0L 91 Wrangler Flywheel I have in my garage has a diapragm clutch setup on it. I thought asbout changing over to it when I had the engine out,but the 10.9" was a known entity so I stayed with it. If your looking for light peddle and good hold, I believe the diapragm presure plates are the way to go. I'm not sure on peddle travel, If you go hydraulic as you were talking about, didn't Eagle use diaprahgm clutches from the start? Make absolutely sure you don't end up with a clutch master from a 4 cyl Eagle! they have a different bore form the six cylinder cars and boy are they stiff!!!
