Carbureted cars can be very persnickety when cold, and even when warm.
Several factors effect this.
Fuel mixture at particular rpms based on choke settings. adjustment of the 
choke pull off, the heatriser functionality
interior cleanliness of carburetor, properly adjusted carburetor (jets, 
transfer ports, needle and seat, fuel level in the bowl,
ignition timing,

There is a diaphragm like looking device on some throttle idle stops that 
prevent the throttle plates from closing too fast, that could be the warm 
engine stall when returning to idle culprit.


Without cold engine operating features working correctly, the engine will 
have to be throttle foot babied until warm.
