Honestly, what matters is 'balance' within the overall look you are going for. If this is to be a 'stock-styled' car using orginal type seating, I'd recommend going with the factory's one-color approach. But if you are doing it in a 'Tuner' custom look, you may want to follow the norm of that hobby and use two or even three colors to accentuate the individual compnents of the dash assembly.
