Always try to remember where you are going and how you want to get there. 
If a scratch built auto is what the seller wishes than someone is going to get one 
heck of a nice Donohue at a good price. 
I'd put in a diaphragm pressure plate and disc, add the cruise and go with it. 
A 700R4 and cruise would be sweet too and do zero harm to the value as long as you 
don't chop it up and keep the stick stuff. 

I can understand the acl stuff and the reluctance to have surgery. The docs 
will promise you the moon, always ask this question, " what happens if you can't fix it?" 
My 80 year old dad lost the last 20-30% of his rotator cuff due to failed repair surgery, 
I have had partial Shoulder replacement and they don't tell you it will take 1 1/2 - 2 years for recovery. 

I have the right side screwed up, shoulder wise with Complex regional pain syndrome 
that can effect my right side from ear to foot, even have one of those fancy spinal chord simulators; My American is my last bastion of stick shift. 
I will give it to my sons before I put an automatic in it!!!

I am baffled why you are selling this car, I believe that if you search, you 
will find a clutch setup that has very little pedal pressure, works well 
enough, after all you're 60, you don't need to lay rubber from here to 
Timbuktu, and probably will not bother your ACL. 

I have a 70 Javelin with a T5 with a clutch that has very little pedal 
pressure, I think a 13 year old girl could drive this car.
