I'd totaly disassemble the heads and scrube everything clean, like a gun 
  brush down all the valve guides.

Personally, I find that dropping cast iron off at a shop for boiling and 
media blasting (where appropriate) to be worth every dime. It gets out 
stuff you can't reach or even see. And that crud is 40+ years old! If 
you miss stuff you'll regret it and have to do the job twice!

No way epoxy or anything you can apply will fix piston crowns.

That thing is older than old, it's an antique. I bet you can save a lot 
of parts and re-ring it, maybe buy one piston... but you won't regret a 
full disassembly and boil-out.
