I agree. I think that 600 may actually be bit too much for the 287, well, probably not, but I'd try a factory 327 carb first, if it doesn't run out of steam at too low an rpm it should be a  real good match for one.
  I've tried several times to get my brother to try out one of my factory carbs and intakes on his 287 and he isn't interested. He says his runs way to nice to mess with for a cruiser only.
  Back in 66 a Dr in town bought his wife a new car andit came in with a 327 2 barrel instead of the 4 barrel he wanted on it. So the dealer swapped on a 4 barrel intake and carb.
My dad did the work, said the dr was actually very pleased with the outcome cause it still ran excellent on regular where as the 4 barrel motors wanted premium. But anyway, I digress, The 327 2 barrel carb laid in the dealerships parts dept tagged as to what it came off of until 2003 or so! My brothers small 287 2 barrel kept screwing up and dad went looking for parts to overhaul it and stumbled on the drs old carb. he put a kit in it and it has worked perfectly ever since. The 287 came with a 2 5/16 throat carb. 327 came with a 2100 [I think that is the designation]. Anyway a larger two barrel. Dave could go that route for a little better pickup if the 4 barrel eludes him.
