I think you'd get lots of interest also. The only thing I'd do different
is stick a GEN-1 287 or 327 in with a 150-175 shot of nitrous (on stock
pistons that's about as far as you can go -- most nitrous suppliers say
200 hp is tops, I'd leave a little more room there!). The bottom end and
rods will take it easy, the pistons will be the only weak link. 

Nothing wrong with your idea at all -- it will get lots of interest
because most people don't remember what a "real Rambler" looks like!! 

Just get the street car fixed first... ;>
