   I know you didn't ask me but here it is FWIW. 
   Great #'s on that 343! As for storing it I would pour transmission fluid into each spark plug hole and rotate engine to get everything inside coated. I would also coat the top of the heads and valvetrain. The tranny fluid will really protect everything from moisture and corrosion. Also take an air hose and try to blow all the fluid from the water passages.
   As for good oil to run I am sure Lee has reccommended Joe Gibbs racing oil but a good much less expensive oil is Valvoline racing oil, the one that says "Not street legal" on the bottle. It has all the good stuff in it and is only about 4.50 a QT. 
    When I broke in my street 401 on the engine dyno I used that oil along with a bottle of the GM EOS. We did the brake in with only the outer valve springs then replaced the springs and readjusted the hot lash. 
   My goal with the motor was 500 HP on 93 octane pump gas with no other power adders. our first pull was 520 HP.
