I more than a bit confused by why anyone would need a mini stater for a 10.1 compression ratio engine in the first place. Unless they significantly reduced the AMC starter torque characteristics from the early years, a 10.1 compression ratio is not a big deal and shouldn't be an issue for a stock starter. As for the flex plate breaking, I have run 450+ horsepower engines on stock flexplates multiple times and never had a single problem. It sounds like your 360 will be between 300 and 325 hp so all the stock gear should work just fine.
