What size carb?

My son has a 78 Matador with a stock 360.  The car is his daily driver, and 
has about 60,000 miles.  He's wanting to replace the carburetor with a 4 
barrel.  I plan to use an Edelbrock SP2P intake that I already have on hand.  
My question is what size carb should I go with?  Would a 600 cfm be too much?  
I'm thinking maybe I should use a 500 cfm.  Suggestions?
