If you to my website, there's a picture of an assembled rear brake in the 
parking brake cable R&R page (it should be the same brake setup you have).

super detailed picture but you can get the general idea. It does sound like 
you put it together backwards.

You also need to make sure that you get the jack screw on the correct side 
of the car. One has a left hand thread and the other a right hand thread. 
It should be marked as to which side it goes on. If you're not sure, 
turning down on the star wheel should cause the shoes to move outwards.

You should also make sure that you put a small dab of white grease on each 
of the brake shoe rub points on the backing plates (those are shown on the 
above page) to make sure the shoes move smoothly.

Also, it's a little late now but for anyone else doing their first drum 
brake job (or it's a different type of brake, or it's just been a long 
time), it's always best to do one side at a time or take a picture of the 
brake *after* you've hosed it down with brake cleaner so you have a point 
of reference.
